Most catering quotes start from a package, and most packages need a small change before the customer says yes. Two guests are vegetarian. The office would rather skip dessert. The client wants one more salad on the buffet. None of that should mean building a new package, or editing the one every other quote depends on.
In Puree you make those changes inside the quote. The package in your catalogue stays exactly as it was.
Open the package on the quote’s items page and every dish has an Edit button. From there you can rename it (with a separate name for the kitchen if you like), change its dietary codes and allergens, set its quantity, move it under a different menu header, add a chef note, or keep it off the customer’s quote. Editing a dish never adds a charge: it is still part of the package price.
Every section of the package, such as Entree, Mains or Dessert, has a × on its heading. Click it and the whole course comes off this quote, with a Restore link in its place in case the customer changes their mind.
If the package allows additional items, you can also add extras at the bottom: anything from your catalogue, or a one-off item made just for this quote. Extras sit inside the package price too.
A package’s dishes follow its guest count, which is what makes packages quick. A bespoke change breaks that on purpose: if you set the chicken to 28 because two guests are having the vegetarian dish, you don’t want the next guest-count change to put it back to 30.
So a quantity you type by hand stays put, and so does an extra. When the guest count changes afterwards, Puree lists the lines that won’t move with it, so nothing is left behind without you knowing.
Thirty guests on a three-course plated package, two of them vegetarian, and no dessert:
The customer sees a quote that matches what they asked for, the kitchen sees exactly what to make, and the package is ready for the next quote unchanged.
