When you add items to a quote, the buttons above the list are your categories: Canapés, Salads, Buffet Mains. That suits most quotes. But when you already know the menu you want, such as Menu1 or Spring menu, its dishes are spread across several categories and you have to hunt through each one. You can now select your items by tag instead.
On a quote’s items page, at the top right of the category buttons, there is a Category / Tag switch. Choose Tag.

Switching back to Category shows your categories again. Switching never reloads the page, so nothing you’ve added is lost. Puree remembers your choice, so your next quote opens the way you left it (on the same browser).
Tag your items first. Open an item and add tags in the Tags field under Classification, or tag many at once with Bulk edit on the items list. Item tags are managed under Settings → Tags, on the Item tags tab: see Tags and our article Item Tags: Find a Whole Menu in One Search, Whatever Categories It Sits In.
Your online menus can be grouped by tags too, so customers browse by the same groups. There each dish shows once, under the first tag you’ve chosen for it: see Online Menus.
